Our Story

Las Margaritas Mexican Bar and Grill opened in October 2012. However, this restaurant wasn't owner Francisco Esquivel’s first attempt at a Mexican restaurant. In 1997, the original Las Margaritas opened its doors in Poplar Bluff, MO. Esquivel’s cuisine was so popular at his first restaurant that he later opened a second Mexican spot nearby called Mayas.

Knowing that we had a lot of fans here in Columbia and after hearing about a potential restaurant space opening up in the Corporate Lake development we decided to expand to Columbia. The space features a large patio and sits adjacent to a manmade lake, which makes our restaurant an ideal spot for relaxing happy hours.

Las Margaritas’ signature beverage, a lime margarita, is the perfect balance of sweet, tangy and tart. In addition to the classic version, we make a variety of flavored margaritas, including mango, strawberry, peach and raspberry.

Our mission is to serve freshly prepared food and drinks each and every time you join us. From authentic Arroz Con Pollo to tender Carne Asada, every item on the menu is expertly prepared with the finest ingredients.

Las Margaritas offers a wide range of authentic Mexican and Tex-Mex favorites. The succulent Chile Colorado is a refreshing and satisfying alternative for steak lovers...Camarones a la Diabla is a bold dish featuring tiger shrimp served in our signature spicy ranchero sauce...the gigantic Burrito Gonzalez is designed with a big appetite in mind and is stuffed with sirloin steak or chicken, onions, bell peppers and beans...Tacos Al Pastor is pleasing to both the palate and the eye and comes with grilled pineapple, corn tortillas, and a savory chille ancho salsa.

Our extensive menu also includes several desserts. For a delicious end to your Mexican feast, indulge in Xango, a creamy cheesecake wrapped in a pastry tortilla that is fried and served with ice cream...Sopapilla, a flour tortilla deep fried and topped with butter, honey, and cinamon...or Flan, which is baked fresh daily and is served in the traditional Mexico City style with creme caramel.
